Check out this Eggplant Parm that our customer Rebecca made
using Great Aunt Louise’s Family Sauce!

Maybe we can get her to share her recipe because this looks deliziosa!!
She ordered another case of sauce so she must be planning on cooking a LOT! 

Here’s her recipe!

Thanks for sharing! We only grow Rosita eggplant . Thinner skin, light purple, fleshier, less bitter. 
I slice them and layer w wax paper for the freezer. These are from August! Temper them, let them sweat overnight. Dredge w flour, egg, rough Breadcrumbs. Bake til crispy. 1/2 jar of Great Aunt Louise’s family sauce ,on bottom of casserole , layer eggplant slices, shaved parm, grated, and broken pieces of fresh mozzarella. repeat , adding sauce as needed. This was a 2 jar operation!! Top with choice of cheeses, and fresh parsley , bake until browned. Enjoy!
